About us

The Gelato Collection project is the brainchild of Albert Adrià, Alfredo Machado and Ángel Velasco, general manager of Torrons Vicens.

The aim is applying the philosophy and our way of understanding gastronomy adapted to the ice cream trade, whose purpose, as in the rest of our projects, is to learn and explore such an interesting world. Always respecting the most traditional recipes with the flavors of always, but also exploring new ones inspired by combinations of ingredients thought out from a gustatory point of view.

Our idea is to create a bank of numbered recipes, to which we will regularly add new flavors, taking our inspiration from the world of perfumers in order to contribute our own way of understanding the world of ice cream to such an interesting profession.

Albert Adrià Acosta

Albert Adrià Acosta

Albert Adrià Acosta (L’Hospitalet de Llobregat, 20 October 1969) is a Catalan chef, pastry chef and businessman. He is considered one of the most influential people in the world of gastronomy and, together with his restaurants, has received the most prestigious awards and distinctions in this cultural discipline.

In 2013 he was recognised as one of the 13 most influential people in the world in gastronomy and food, and in 2015 he received the award for best pastry chef from The World’s 50 Best Restaurants.

He was part of elBulli between 1985 and 2008. In 2006 he opened Inopia Classic Bar in Barcelona, a promoter of prêt à porter haute cuisine and a pioneer of the ‘gastrobar’ concept. Between 2011 and 2017 he opened a total of 7 restaurants (41º Experience, Tickets, Pakta, Bodega 1900, Niño Viejo, Hoja Santa and Enigma) within the global project that brings together different gastronomic concepts under the name elBarri. In 2015 he signed a creative alliance with Ferran Adrià and Le Cirque du Soleil for the Heart Ibiza project. In 2018 he opened Cakes & Bubbles London, a sweet restaurant specializing in pastries and sparkling wines.

Alfredo Machado

Alfredo Machado Díaz, born on 17 July 1990 in Maldonado (Uruguay). From a very young age he showed a great interest in gastronomy, so in 2006 he decided to travel to Spain to train as a chef and pastry chef at the Hofmann School of Hotel and Catering in Barcelona. He then decided to specialise in pastry, his great passion, forming part of Josep Maria Rodríguez’s team (World Pastry Champion) at Pastisseria Barcelona. It was not until 2015 when he began his career within the El Barri group (Tickets, Bodega1900, Pakta, Enigma, etc) working as head of production and in the pastry R&D team.

He participated in national and international projects such as Cakes & Bubbles in London, Little Spain in New York, Heart Ibiza and ADMO in Paris. In 2020, he was recognized with the Revelation Pastry Chef award at Madrid Fusión.
